A fine grit stone is a great tool for pushing the edge a bit further and creating a near-mirro finish on a wide bevel. A #6000 grit stone gives a very refined edge that allows you treat the ingredients with respect by preserving their texture and integrity. In addition, it is a great range to have for most single sided tools sharpening.

Recommended usage: This is an interesting stone; you can use it as either a splash-and-go stone or a soaking stone, but you cannot alternate, as this will lead to cracking and breakage. We use it as a soaking stone, making it slightly softer and easier to use for wide bevel polishing, which this stone excels at. It creates a very fine edge but too slippery for our taste, yet makes up for it in creating fantastic contrast in hard and soft steel. We recommend using it with good amount of slurry to prevent soft steel from being scratched, and gentle pressure.
