The Toushu Yanagiba is a traditional Japanese sashimi knife, specifically designed for slicing raw fish and preparing sushi or sashimi with clean, precise cuts. Forged from Molybdenum Vanadium Steel, the blade offers excellent corrosion resistance, toughness, and ease of sharpening while maintaining a razor-sharp edge.
This Yanagiba is constructed from monosteel with a single-bevel grind, giving chefs the precision required to slice fish in a single, smooth motion without tearing the delicate flesh. The slender blade profile (210mm or 240mm length) allows for graceful, long slicing strokes, ensuring that presentation is as perfect as flavor.
