Crafted from premium paulownia wood, this cutting board is specially designed to complement Japanese knives. Although paulownia is classified as a hardwood, its surface is relatively soft. This softer surface is highly valued in Japanese wooden cutting boards because Japanese knives typically feature very hard steel and extremely sharp bevels.
The gentle surface of paulownia helps absorb impact while cutting, reducing stress on the blade and helping maintain sharpness for longer. This makes it a safe and ideal cutting surface for your Japanese knives.
Paulownia cutting boards are also exceptionally lightweight and easy to handle. They are simple to clean and dry quickly. Naturally water-resistant, paulownia wood is less prone to warping or deformation over time. In addition, it has natural antibacterial properties, helping to inhibit bacterial growth and maintain a more hygienic kitchen environment.
Paulownia trees grow in America and East Asia, but the wood is especially prized in Japan. It is traditionally used to produce cutting boards in Kamo City, Niigata Prefecture — a region renowned for its craftsmanship in knives and cutting boards.
