Founded in 1874 in Sanjo City, one of Japan’s most renowned regions for forging cutting tools, Shimomura began as a maker of sickles and hoes before expanding into high-quality stainless steel knives, scissors, and slicers. With over a century of experience, the company has preserved traditional forging techniques while adapting to modern steel innovations.
Each Shimomura knife goes through around 35 meticulous production steps, from forging to finishing. The blades are sharpened using the wet grinding method, one of the most skill-intensive techniques. During this process, water is applied as the blade is ground to create the Hamaguri edge, polished to a mirror-like finish. This produces exceptional sharpness, smooth cutting performance, and superior edge retention compared to standard knives.
