Founded in 1874 in Sanjo City, one of Japan’s most famous cutlery-producing regions, Shimomura has been forging blades for more than a century. Starting with farming tools such as sickles and hoes, the company later advanced into producing stainless steel knives, scissors, and slicers. Today, Shimomura continues to blend traditional forging craftsmanship with modern stainless steel technologies to produce reliable kitchen tools.
Each Shimomura knife is created through about 35 precise steps, from forging to finishing. The blades are sharpened using the wet grinding method, one of Japan’s most demanding sharpening techniques. By applying water continuously during the process, the blade is refined into a Hamaguri edge, mirror-polished for smooth cutting and superior edge retention compared to ordinary blades.
