Founded in 1874 in Sanjo City, one of Japan’s most prominent cutlery-making regions, Shimomura began as a maker of agricultural tools such as sickles and hoes before evolving into a specialist in stainless steel knives, scissors, and slicers. Over more than a century, Shimomura has built a reputation for producing sharp, durable, and easy-to-maintain kitchen tools.
Each Shimomura knife undergoes around 35 meticulous steps in production. Blades are finished using the wet grinding technique, where water is continuously applied during sharpening. This creates the refined Hamaguri edge, polished to a mirror-like finish, ensuring exceptional sharpness, smoother cutting, and superior edge retention compared to standard knives.
