Founded in 1874 in Sanjo City, one of Japan’s most respected knife-making regions, Shimomura began as a blacksmith producing farming tools such as sickles and hoes before advancing into stainless steel knives, scissors, and slicers. With over 140 years of history, the brand has become a trusted name for crafting cutting tools that are sharp, durable, and easy to maintain.

Each Shimomura knife is produced through around 35 careful steps from forging to final finishing. The blades are sharpened using the wet grinding method, where water is applied during sharpening. This creates the Hamaguri edge, polished to a mirror-like finish for smoother cutting and longer-lasting sharpness compared to standard blades.
