Each Shimomura knife goes through around 35 meticulous steps from forging to finishing. The blades are sharpened using the highly skilled wet grinding method, where water is applied continuously during sharpening to create a refined Hamaguri edge. This process produces a blade polished to a mirror-like finish, ensuring exceptional sharpness, smooth cutting, and longer edge retention compared to conventional knives.
