Established in 1874 in Sanjo City, one of Japan’s most renowned centers for forging tools, Shimomura began as a maker of farming tools such as sickles and hoes before evolving into a specialist in stainless steel knives, scissors, and slicers. With more than a century of expertise, Shimomura continues to blend traditional blacksmithing skills with modern steel technology to produce high-quality cutting tools that are sharp, durable, and easy to maintain.
Each knife requires around 35 careful steps from forging to finishing. The blades are sharpened with the wet grinding technique, one of the most advanced sharpening methods, where water is applied during the grinding process. This produces the refined Hamaguri edge, polished to a mirror-like finish for smooth cutting and superior sharpness retention compared to ordinary knives.
