Established in 1874 in Sanjo City, one of Japan’s most famous blacksmithing hubs, Shimomura began as a maker of farming tools such as sickles and hoes before advancing into stainless steel knives, scissors, and slicers. With more than a century of experience, the brand is known for combining traditional forging techniques with modern stainless steel technology to produce sharp, durable, and easy-to-maintain blades.
Each knife is crafted in around 35 meticulous steps, from forging to finishing. The blades are sharpened using the wet grinding method, where water is applied during grinding to create a highly polished Hamaguri edge. This mirror-like finish provides superior sharpness, smooth cutting performance, and better edge retention compared to conventional knives.
