Each Shimomura knife goes through about 35 detailed steps, from forging to finishing. Blades are sharpened using the advanced wet grinding method, where water is continuously applied during sharpening. This produces the renowned Hamaguri edge, polished to a mirror-like finish, ensuring smooth cutting performance and superior edge retention compared to ordinary blades.
