SHIMOMURA – Molybdenum Vanadium Stainless Steel Bread Knife 220mm

Each SHIMOMURA knife goes through approximately 35 meticulous production steps, from forging to final finishing. The blades are sharpened using the traditional Wet Grinding technique, where water is applied during sharpening to create the distinctive Hamaguri (clam-shaped) edge. This technique produces an exceptionally smooth, mirror-like finish that not only cuts effortlessly but also maintains sharpness longer than conventional edges.
