Description
Sakai Takayuki Kasumitogi Deba 165mm – Model No. 6036
Description:
Sakai Takayuki is one of the most renowned names among knife enthusiasts and collectors. Established in Sakai (Osaka), the brand carries over 600 years of knife-making tradition. Sakai Takayuki began producing knives in the 16th century, initially crafted for cutting and trimming tobacco leaves. Among its legendary blacksmiths is Itsuo Doi, grandson of the famed Keijiro Doi, who elevated the reputation of Sakai knives worldwide.
The Kasumitogi Series is a well-balanced line suitable not only for beginners but also for professional chefs. It combines excellent craftsmanship with affordability. This Deba is hand-forged using Yasuki Shirogami #3 (White Paper Steel) for the core, clad in softer steel through the Kasumi method. Shirogami steel offers excellent sharpness, easy sharpening, and reliable edge retention.
The handle is crafted from Japanese Magnolia Wood (Hinoki) in a traditional U-shape, paired with a water buffalo horn ferrule. This ensures a comfortable and secure grip even during extended use.
