Description:
Sakai Takayuki is one of the most renowned names among knife enthusiasts and collectors worldwide. Based in Sakai (Osaka), the brand has more than 600 years of knife-making history. Production began in the 16th century, originally crafting knives for cutting and trimming tobacco leaves in the Sakai region. Among its legendary blacksmiths is Itsuo Doi, grandson of the famous Keijiro Doi.

This Usuba is crafted from AUS-8A Inox stainless steel, offering excellent rust resistance and durability, making it ideal for users who prefer a sharp knife without the extra maintenance required for carbon steel. The handle is made from Japanese Magnolia Wood (Hinoki) in a traditional U-shape, paired with a water buffalo horn ferrule for added strength and comfort during extended use.

Usage:
The Usuba is a traditional Japanese vegetable knife with a thin, tall blade. The word Usuba literally means “thin blade.” Its design allows for extremely thin and precise cuts, making it perfect for traditional Japanese cutting techniques such as:

  • Katsuramuki (rotary peeling for garnishes and decorative sheets of vegetables)

  • Kazari-giri (decorative cutting techniques)

Just as the Yanagi is designed to minimize damage to fish fibers, the Usuba is crafted to preserve the natural texture of vegetables by reducing cell damage during slicing.
