⚠️ Important Note on Care
This knife is made from high-carbon Shirogami steel, which allows it to be sharpened to an extremely fine edge and provides excellent edge retention.
However, because Shirogami is a reactive steel, it is prone to rust and patina if not cared for properly. After each use, clean the blade thoroughly, dry it immediately, and apply a thin coat of oil before storing to protect it from moisture.

🍣 About the Yanagi
The Yanagi knife is traditionally used in Japanese cuisine for preparing sashimi, sushi, and other seafood. Its long, slender blade allows for smooth, single-stroke slices that preserve the texture and freshness of delicate fish.
In Western kitchens, the Yanagi has also become popular for carving large roasts or filleting fish with precision.
The name Yanagi means “willow blade”, referring to its long, graceful shape reminiscent of a willow branch.
