This knife was specially designed to suit the cutting style of Maitre D’ (French service staff) and is intended for use in Guéridon Service (tableside service using a trolley), which is commonly practiced in exclusive restaurants.
The handle, crafted from 18-8 stainless steel and fully welded to the blade, ensures maximum hygiene with no gaps where bacteria can grow. It can also be sanitized easily by dipping the handle in hot water.
Additionally, the Tornado Pattern handle provides a secure grip even when hands are wet or greasy. The blade is made from MV Steel, known for its excellent corrosion resistance, durability, and sharpness.

The TOJIRO Pro 210mm Gyuto is an excellent all-purpose chef’s knife for daily kitchen use. This is the larger version of the 180mm Gyuto, preferred by chefs and home cooks who favor a bigger and slightly heavier knife.
While considered relatively heavy for a Japanese knife, its weight is comparable to standard German chef’s knives, making it ideal for users who enjoy a solid feel in hand. Compared to the 180mm Gyuto, this 210mm version makes cutting larger ingredients much easier and more efficient.
