TOJIRO MV Yanagiba 270mm (F-1058)
The Yanagiba is a traditional Japanese sashimi knife, designed specifically for preparing sashimi, sushi, and other delicate seafood dishes. The name “Yanagi” means willow blade, reflecting its long and slender shape that resembles a willow branch.
This knife features a Molybdenum Vanadium stainless steel core clad in stainless steel, making it both highly rust-resistant and easy to re-sharpen, while maintaining excellent edge retention. The single bevel edge provides razor-sharp precision, perfect for clean, smooth cuts.
The handle is made of magnolia wood, which is naturally water-resistant, and reinforced with a resin collar for added durability and balance.
