The TOJIRO MV Yanagiba 240mm is a traditional Japanese-style knife. Its blade core is made from Molybdenum Vanadium stainless steel, clad with stainless steel, making it easy to re-sharpen while maintaining excellent edge retention.
The single bevel edge design ensures extreme sharpness, ideal for precise slicing. The handle is made from magnolia wood with a resin collar, offering durability and strong water resistance.

Usage
The TOJIRO MV Yanagiba 240mm is designed specifically for preparing sashimi, sushi, and seafood dishes. Its name, Yanagi (meaning “willow blade”), comes from its long, slender shape resembling willow branches.
Unlike a Western chef’s knife, the Yanagiba is not meant for chopping straight down. Instead, it is used with a slicing and pulling motion, ensuring clean, precise cuts without damaging the delicate texture of fish.
Beyond Japanese cuisine, this knife has become popular in Western kitchens for slicing large roasted meats and other fine carving tasks.
