Sakai Takayuki Kasumitogi Series – 150mm Deba (Model 6035)
Sakai Takayuki is one of the most respected names among knife enthusiasts and collectors. Founded in Sakai (Osaka), the brand carries over 600 years of knife-making tradition, dating back to the 16th century when blades were originally crafted for trimming tobacco leaves. One of its most renowned blacksmiths, Itsuo Doi, is the grandson of Japan’s legendary bladesmith Keijiro Doi.
The Kasumitogi Series is a product line designed for both beginner cooks and experienced chefs, offering excellent craftsmanship at an accessible price point. This Deba knife is hand-forged using Yasuki Shirogami Steel (#3) as the core, clad with a softer steel through the traditional Kasumi method. Shirogami (White Paper) Steel is known for its superior sharpness retention and ease of sharpening. The U-shaped Japanese Magnolia Wood (Hinoki) handle, paired with a water buffalo horn ferrule, provides a comfortable and secure grip even during extended use.
