About the Maker:
Mutsumi Hinoura is the son of renowned blacksmith Tsukasa Hinoura and represents the 4th generation of this distinguished family craft. By his late 30s, Mutsumi-san had already gained recognition as one of Japan’s most respected bladesmiths. Based in Sanjo, Niigata, a region famous for handcrafted knives, he blends traditional craftsmanship with modern performance.
After graduating from Niigata College of Engineering in 2001, Mutsumi-san honed his skills under his father’s guidance, producing layered tools, including traditional Japanese axes, and more recently, high-quality kitchen knives under the Ajikataya (味方屋) brand.
