Description
The Konosuke GS+ is a favorite among enthusiasts for its exceptional attention to detail, top-class fit and finish, and elegant handles. Available in two finishes—laser-thin Migaki and thicker, flat-ground Nashiji—the knives differ noticeably in weight and feel, with the Migaki being ultralight thanks to its thin blade and chestnut handle, while the Nashiji offers a heavier, more workhorse-like feel with its laurel handle. Both finishes are aesthetically refined; Migaki is subtle and clean, while Nashiji offers darker contrast yet remains understated. Featuring Konosuke’s signature machi gap, both versions provide excellent cutting performance and balance. The GS+ boasts great edge retention (61–62 HRC) and durability, and being semi-stainless, it requires less maintenance than carbon steel, though it may still develop a mild patina over time.
